what’s the story laughamole?

I fell out with my bike a couple of days ago.  Decided to go to Aberfoyle and it felt like I’d cycled to China by the time I got down the road.  Then yesterday after a similarly moany cycle to Dumbarton I realised my seat was far too low so I’ve been working a million times harder than I’ve had to.  Hooray for higher seats.  Now I’m back in love with my bike and cycling 🙂

Decided to try out the West Highland Way today.  I am so utterly ashamed to say I’ve never been on the damn walk way having grew up so closeby!  Sh-AME-full.  It’s the most gorgeous track from Milngavie to Fort William (A LOT of miles, like a million or something).  God I’m going to have to go check now amn’t I? Stupid blog hang on…ok 96 miles.  Read about it here The route to Milngavie from my house is pretty much vertical in some bits so I had to swear a lot and push my bike up those bits.  Still loved it though, really getting in to my cycling.  I now want to cycle the whole route.  Might take a few days but it’d be worth it.  FEEELING GOOD!

Anyway, still been so busy putting the booklet together for my classes at Strathclyde Uni.  Full details should be in the online prospectus this week plus I find out next week whether my proposal has been accepted on the Evening & Weekend programme starting next academic year AND the learning in later life programme which is teaching er, older people 🙂

Can’t wait.  I also volunteered to take some classes in local community initiatives and heard back from a place in Balloch that teaches classes to 8-18 year olds.  They are interested in the classes but without any nut recipes as some of the kids are intolerant.  Not really a huge problem as I don’t tend to make many things with nuts anyway…

So yeah…kids and old folks. Cosmic 🙂

Not much else going on really.  Have massively upped my superfood intake the last few days.  I really missed my crazy superfood concoctions so I’m back on that.  Today Matthew I had:

GREEEEEEEEEN juiceysmooth – juiced 2 cucumbers, head celery, 1/2 lemon, 1/2 burdock root then added juice to vitamix and blended with 1/2 bag spinach and handful of pineapple.  Have been upping my green juices in the morning and feeling amazing for it!

Did my wee cycle to Milngavie then enjoyed a 2 banana smoothie in the sun for some energy.  Cycled home and made hemp milk with purple corn and camu camu.  Calling this one Purple Rain cos I bloody love Prince…he’s so sexy…I think anyway.

Made some laughamole for lunch.  Laughamole is Guacamole Xcept with He Shou Wu in it.  According to Raw Living (which just so happens to be where I buy my supply)

He Shou Wu is an ancient Chinese remedy, and like Reishi, is classed as a Superior Tonic Herb in Chinese medicine. He Shou Wu is the most amazing longevity tonic of all. It is widely used in Chinese herbal medicine to prevent premature aging by tonifying the Kidney and Liver functions. He Shou Wu is also is known to bring up Jing (vital essence), nourishing the blood, and fortifying the muscles, tendons and bones. It strengthens and stabilizes the lower back and knees. He Shou Wu is also used to enhance sexual drive and fertility in men and women.

I just think it takes Guacamole to a whole new level!  Laughamole: 1 avo, 1 tomato, 1/8 red onion, handful coriander, salt, 1/8 red chilli, 1 garlic.  Mix in food processor with S blade.  Served it on gem lettuce with pumpkin seeds then scooped the rest up with my green smoothie and chia crackers!  Serious yum.
