Just sharing this bloody corker of a pud with you. I’ve made it three times this week and it’s been my absolute saviour of a pudding because it’s so easy to make with my minimal equipment and supplies 🙂
Bounty Coconut Chia Pud
- Soak 1 cup of coconut flakes in pure water for a few hours to soften
- Rinse and blend with 1.5 cups water (this is how much my mini blender holds) and 2 tsp xylitol or sweetener of choice
- Strain through nut milk bag or ordinary mesh seive – set aside the pulp!
- Soak 2 tbsp of chia in the coconut milk mixture until well absorbed (about an hour) – if you need to add more chia seeds to get a thick consistency do so, it shouldn’t be too watery.
- Mix in the pulp from the coconut flakes and combine thoroughly
- Mix in 2 tbsp xylitol for a sweet coconut hit!
