1.5 cups chopped cashew nuts
1.5 cups dessicated coconut
100g of coconut oil, melted
3 lemons, juice and zest
Mix the cashews and coconut together with the zest from the lemons. Gently mix in the melted coconut oil.
Start to add in the juice from the lemons as much as required to make the mixture firm enough that it holds together when squeezed in your hand.
Make blobs of the mixture into little balls then flatten gently in to bite sized pieces (any bigger they will fall apart in the dehydrator).
Dehydrate for approximately 24 hours or if you like them slightly chewier a bit sooner.
Keep in a tupperware box in the fridge and they last 4 weeks.
This recipe makes about 50 – 75 cookies so you may want to scale it down, but to be honest they are so tasty, it’s totally worth making loads since they get eaten really fast!
