Yay it’s Friday. This is a jam packed blog, but without the jam!
It feels terribly boring filling you in on what I eat all the time unless it’s a bit sexy. Actually that’s completely going against what I said here so I take that back. You might have noticed it’s a lot of the same stuff. I do tend to go through phases of eating something over and over then get sick of it and move on to something else. Likely to get back in to salads this week after picking up some sexy mixed organic greens from grassroots.
Woke up to a magic green smoothie lovingly prepared by my husband. He is so gorgeous! Pineapple, kiwi, rocket, spinach, watercress and cucumber. Then had mangoji. Then made a yumbo choc almond banana smoothie. Calling it chocmondana 🙂 Almond butter is a cheat’s way to make almond milk. All you need is a tablespoon blended with some water and a bit of sweetner and you’re good to go!
3 bananas, 1 small tablespoon almond butter, 1 teaspoon raw choc powder, 1 cup water. Blend. Done.
My lovely friend Lisa from Raw Liberty has lovingly donated a recipe to my blog today. It’s a fab recipe because it can be so easily adapted for a cooked partner using pretty much the same ingredients. Here it is…ta daaaaah!
For the raw version
Ingredients: 2 courgettes, mangetout, sliced, 1/2 cucumber, diced, 2 spring onions, chopped, 1 avocado, diced, 5 tbsp lime juice, 2 tbsp olive oil, 1 tbsp agave, 2.5cm ginger, 1 red chilli, 4 tbsp chopped coriander, lemon slices to garnish
Spiralise the courgette and sprinkle with salt. Blend together the lime juice, olive oil, agave, ginger, chilli and coriander. Stir in the cucumber, spring onion and avocado. Pour over the courgette noodles and toss. Garnish with lemon slices.
For the cooked version (Prawn & Noodle Salad)
Ingredients: Packet rice noodles, mangetout, sliced, 1/2 cucumber, diced, 2 spring onions, chopped, large peeled cooked prawns, 5 tbsp lime juice, 4 tbsp fish sauce, 1 tbsp sugar, 2.5cm ginger, 1 red chilli, 4 tbsp chopped coriander, lemon slices to garnish.
Pour hot water over the noodles and leave to soak. Blend the lime juice, fish sauce, sugar, ginger, chilli and coriander. Stir in the cucumber, spring onion and prawns. Pour over the drained noodles and toss. Garnish with lemon slices.
I’ve been to one of Lisa’s Raw Food Classes and I can honestly say her food is AMAZING!
This recipe is from Lisa’s new ebook entitled Raw Liberty at the Table: You and Your Not-so-Raw Partner available to buy soon from her website. Can’t wait to get my hands on a copy! Lisa has a lot of experience of what it’s like to live with a partner who isn’t raw and she coaches people in similar situations. I bloody love Lisa. It was after I met Lisa the first time that I was inspired to write my book. I do think she’s an inspiration to raw women worldwide. 🙂
Anyway, tonight I went out for dinner with my amazing friend Lucy. We went to a Turkish place and I had a nice salad with hummus and taboule and falafel. Very nice.
I got a parking ticket though. I was quite impressed with myself because my first instinct was to feel like shit about it but when I just accepted the situation it felt tonnes better. I even had a lovely conversation with a nice man on the phone to the payment office. I wanted to pay it straight away to get it out my mind. Own stupid fault. Lesson learned not to park on an urban freeway just cos 6 other cars have. 🙂 I’m learning to accept what is more and more these days – it leads to a much happier life.
Didn’t manage to get out on the bike today but did some lovely rebounding in the sun. It’s great rebounding in the sun cos you can watch your shadow 🙂 I think exercising outside is far more healthy cos you get some vit d and fresh air about you. I love the sunshine!! There’s not a cloud in the sky (no planes cos of Iceland) and it’s just gorgeous. I wish the sky was like this all the time. I wouldn’t care if I couldn’t fly again.
Also did 20 mins of hula hooping. Managed to upload my vid woo hoo, a million megabytes later.
Very excited about tomorrow. I’ve found another spring to go and test for water collection and I’m also going on a wild food foraging tour in Edinburgh. Woo woo. Can’t wait to learn all about wild food!
