My lovely friend Sarah of Grassroots noteriety has a wonderful blog called Lusciously Raw and recently blogged about these wonderful cookie boxes she put together. Because I was obviously a saint in a previous life I got to get my hands on one of these gorgeous little gems.
First let me introduce you to the best oatmeal raisin cookie you’ll EVER taste. Seriously, I think Sarah must put drugs in these because my husband and I LOVE them. Sooooo yummy. They taste even better than the cooked equivalent. Ok Sarah definitely doesn’t put drugs in her raw food…unless you count cacao but let’s not even go in to that debate 🙂

Sarah is clearly not of this world with her creative raw food genius. It’s lovely to have these tasty treats to snack on when you’re craving something a bit heavier and comfortably naughty…whatever that actually means.
Here’s the recipe for Sarah’s macaroons (stolen from her blog).
Vanilla Macaroons
2 cups of dried coconut
1 cup of ground alomnds (if you don’t have any finely pulse 2-3 cups of almonds till they become a fine flour)
1 cup of cashew flour
1 cup of agave
1/2 cup of coconut oil
1 teaspoon of vanilla extract/paste
Mix all the dry ingredients together then all the wet ingredients then combine. Make sure you mix thoroughly. Use an ice cream scoop or a 1/4 cup messure to scoop out smallish balls place onto teflex and dehydrate for 24 hours. Next transfer to dehydrator screens and dehydrate for another 12-16 hours depending on how cripsy you want them to be.
