infinite monkeys and raw curries

I know, I know, no recipes for ages and then two come along in one week!  Crazy days, right?  

As per the last recipe, I didn’t actually invent this buttttt I totally could’ve come up with it eventually given enough time and inclination.  You know, like that whole infinite monkey thing, you give a thousand monkeys a typewriter or something and they write Shakespeare?  No hang on, it’s one monkey isn’t it?  Fuck.  What say I go look it up on Google?

Ok yeah, a monkey hitting keys at random on a typewriter for an infinite amount of time will surely type a given text such as the complete works of Shakespeare.

Who comes up with this shit? 

Moving on.

This recipe is fucking sensational.  I’m a sucker for raw curry recipes and this one simply blew me away.  Served with cauliflower and parsnip “rice” which actually turned out more like “cous cous”.  Absolutely AMAZING.

 

Curry Sauce

100g macadamia nuts

1 large courgette

1 tbsp sunflower seeds

1 tsp ground cumin

1 tsp tumeric

1/2 tbsp honey

2-3 tbsp Hemp Oil

3 tbsp curry powder

Black pepper

One small dried chilli

2 tomatoes

1 clove of garlic

1 lemon, juiced (to taste)

1 handful coriander

 

Add all ingredients to a blender.  Adapt recipe to taste.

 

“Cous Cous”

Add 1 chopped cauliflower and 1 chopped parsnip to food processor and using the S blade, pulse until they resemble cous cous.  Add lemon juice, pinch salt, small bunch of coriander leaf and a dash of cumin powder and pulse again.  Add a bit of pepper and gently turn over with a spoon to mix and serve.

Alternatively you could pour the curry sauce over chopped veggies and warm gently in your dehydrator or oven on a low setting.
