Last night I made this for tea. I’m calling it Piece of Piss Pesto Pasta – got a nice ring eh? Raw pesto really is the easiest thing ever! Raw pesto tastes even better than conventional jarred ones because you retain all the lovely flavour. I usually chuck in whatever’s going such as rocket or coriander to sexify it up. This pesto sauce was 1 bag basil, 1 handful soaked almonds, 1 garlic clove, pinch salt, 2-3 tbsp olive oil (cold pressed). Process in the food processor with the S blade. Chuck sauce over spiralised courgette (or use a potato peeler), sun-dried toms, olives. Mix mix mix done.
I remembered today how much I live in paradise when lady of the manor (where I live) brought some lovely organic food to the door. She’s in to growing lots of things and we’ve had loads of lovely stuff (for free) including the biggest courgettes you’ve ever seen, rocket, lettuce, plums, apples and tomatoes. She likes it cos I pick her dandelion leaves that grow around the allotment 🙂
Made a yummy mid afternoon snack. Almond milk, 2 handfuls blueberries, pinch vanilla powder, 1 tsp xylitol and 3 tsp of chia seeds – blend and enjoy whilst remembering how lovely everything really is (especially purple food) 🙂
