good kefir

I watched this vid yesterday and it blew me away.  Dan is so down to earth and lovely at putting his messages of health across.  In this he talks about eating shite till you just go “ach, I can’t do this anymore” in fact he encourages it in the vid and talks about getting started with raw.  Check it out I loved it…and my mum fancies him too!

Still really loving my water kefir,  I’ve been having some every day.  This morning I had a lovely recipe – not posting a pic of it cos 1) I didn’t take one because 2) the colour was a bit, err, minging looking but it tasted DELICIOUS!

Kefir Cucumber Cooler

Blend the following:

  • 2 pears
  • 1.5 cucumbers
  • 1/2 punnet blueberries
  • 2 cups kefir water
  • 1 tsp vanilla powder
  • 1 tsp chlorella powder

A few people have asked me what water kefir actually is so here’s a bitty more info:

The word “Kefir” is thought to have originated from the Turkish word “Keif” which means “good feeling”.  It’s essentially a polysaccharide structure where several non-pathogenic, but friendly or healthy bacteria and yeast live in symbiosis.

Typical composition of Water Kefir grains is: Lactobacillus brevis, Lactobacillus casei rhamnosus , Lactobacillus alactosus, Lactobacillus casei casei, Lactobacillus pseudoplantarum, Lactobacillus plantarum, Streptococcus lactis, Streptococcus cremeris, Leuconostoc mesenteroide, Saccharomyces florentinus, Saccharomyces pretoriensis, Kloeckera apiculata, Candida lambica, Candida valida  [try saying all that when you’ve had a couple of glasses of wine…actually even when you’ve not]

Water Kefir can be of benefit in a broad variety of health conditions including nervous disorders, internal ulcers, bronchial catarrh, sclerosis, myocardial infarction, liver and gall bladder disorders, kidney problems, stomach and intestinal diseases, diarrhea or constipation, anemia, allergies, dermatitis and other skin problems such as eczema.  It can also help regulate blood pressure and weight control, and has good results during pregnancy and abdominal feminine discomfort.*

The best bit is that it’s so easy to do, you just give them some sugar to eat and they do the rest of the work. Amazing!

Milk Kefir has been compared to yogurt, Kefir’s microflora is much more complex.
The exact composition of microorganisms that form the grains usually varies slightly,
depending on the media where they are cultured, and so Water and Milk Kefir differ in
some microorganisms that may specifically grow on milk and not fruit, and the other
way around. Also, depending on the fruits used to culture Water Kefir, we may be
adding new friendly yeast and bacteria to our grains. Typical composition of Water

    Hello, do you know where I can purchase kefir drinks in Scotland? I have been drinking Lifeway kefir smoothies since starting my antibiotics. I’m concerned about not being able to find any while in Scotland. Please let me know if you know where I can purchase some. I won’t have a post address, so I can’t order any. Thanks, Ashlynne

    Hi Ashlynne, I have seen it at Roots n Fruits in Glasgow, I believe they also have it at Wholefoods. I highly recommend making your own though, it’s cheap and easy.

    Great stuff. What’s the juicer that he’s using? And what does he do with the pulp? Ta.

    Hi Noolsie, the juicer might be a Matstone one from what I can tell. As for what to do with juice pulp, it depends what kind of pulp, I usually chuck veggie pulp in the compost, or fruit pulp I sometimes use to flavour probiotic drinks like water kefir and kombucha.
