CHIA CHIA CHIA CHIA.  I haven’t had chia for bloody ageeeees.  It’s so good.  How could I have forgotten?  I think I’m needing some omegas as chia has been sitting in my mind for days now. SOOOOO super yumbo chia breakkie for me! First I made a banana-chocolate-almond cream using 4 bananas, 1 tbsp almond butter, 1 tbsp cacao powder, 1tbsp honey and a bit of water and blended till thick.  I soaked 1 tbsp chia seeds in the choc mix and left it for an hour or so to absorb (chia can absorb over 10 times its own weight in water).  Then I mixed in 1 handful goji berries and 1tbs bee pollen.  Topped with chopped nana and bee pollen.  Super breakfast!  I get my chia seeds from here.

I haven’t really been eating my “superfoods” of late (except for cacao), focusing instead on really simple fruits and veggies.  I want to dip back in to the energy of superfoods like purple corn, chia, bee pollen, he sho wu, camu, gojis etc. so I’m going to incorporate some in to my recipes over the next few days.

I’ve literally fallen in love with WILD FOODS. Check this out!  Amazing.

I’m so excited about getting in to wild food nutrition.  It feels kinda like what it felt like when I discovered raw food.  It’s like that lightning bolt between the eyes that says YES!  The best bit of all is that it’s free and growing right now in the garden!  You don’t even need to go to Tesco!!  I’m going to save a bloody fortune 🙂 I’d like to find more raw food recipes using wild food so that it’s not a case of adding it to a smoothie or salad all the time which is, I guess, what I imagined raw food to be when I first started out 🙂 Ex-cite-ment-central!

Rod and I enjoyed a wild green smoothie using pineapple, cucumber, pear, nettle, sorrel and dandelion (picked from the garden).  It was super yummy and stupidly nutritious!  I was so impressed Rod liked it.  I made him drink some first as I still had a silly notion about being stung 😀

Tonight I was craving some nori so made 2 nori wraps with avo, spring onion, cucumber, alfalfa, watercress and squeeze lime juice.  Lovely.

Last night I made the most orgasmic dinner ever.  Got the recipe from here

I’m serious when I say this is probably the best raw food dinner I’ve ever made.

No biking today.  Am still knacked from yesterday’s 20 mile ride and no rebounding either!

Focusing this week on getting my class material together for my raw food classes at Strathclyde University in June.  I’m so excited about running them, the hard part is deciding what to make!  I’m really keen to keep it simple, easy and fun!

Also working on the menu for raw catering at the holiday cottages as well as another project I’ve got up my sleeve. Busy busy 🙂
