can’t cook, won’t cook :)

Happy Thursday!  Sorry for the crap pictures today, camera trauma.

Today I made the best soup I’ve ever, ever made.  It’s quite sad that I’m this excited about some soup but seriously it was so super yum!  Here you go, here’s Brian.  If you were paying attention you might have spotted Brian the green smoothie yesterday, this is a different Brian and is called Brian for a very good reason.  Anyway:

Thai Sweet Potato Soup

3 sweet potatoes (peeled), 1/8 red onion, 1 knob ginger, juice of 1 lime, 1-2 inches lemon grass (i used dried but fresh would be better) , 75g creamed coconut (not raw), 1 garlic clove, 1 date, 1 cup water depending on consistency you like. blend. done.  this would be nice as a curry sauce too and also for some reason i think some cauliflower florets would be nice in this and a few sprigs of coriander on top would be good…:)

Decided to make Rod dinner tonight.  I made some rolled ravioli bites using my new mandolin.  I just thinly sliced the courgette and then plopped some pesto sauce in and rolled it up.  The mandolin is good but turns out I’ve not got the right attachment for doing long strips so I ended up using my hand – DON’T try that at home unless you’d like fingers for dinner.

Then arranged those around a salad with pesto on top and courgette and tomatoes around the edge.  Check it out – sacred geometry for dinner 🙂

I fancied something light for dinner so had a bag of greens with fennel (I LOVE FENNEL – how did I get to 30 before I realised how good it is?), some capers (go so well with fennel), cucumber and some avo.  Made a dressing of lemon juice and avocado oil. Tasty!

I got on to some chocolate making too for my 29 day giving challenge.  I’m on Day 5 now!  Today I gave away a free copy of my book and sent my chocolate gifts.  I forgot how much fun it is making chocolate!  The best bit is licking the bowl afterwards.  The hardest bit is waiting for the bloody stuff to set in your fridge 🙂 I used the base of a Kate Magic recipe and then added gojis, coconut chips, cacao nibs and buckwheaties for crunch.  I decided to make a love heart for Rod with the chocolate i had left over.  I even put his initials in goji berries!  Hilariously it slid off the plate as it was setting in the fridge and is the most retarded looking love heart you’ve ever seen.

Here’s my chocolate Easter man – he’s fat and chunky!  Should be putting this on facebook shortly once he’s out his wee mould.

Didn’t rebound today. or do any exercise.  If I don’t catch myself in the morning I tend not to be bothered.  I’ll do some yoga later before bed…if I don’t scoff too many chocs 🙂

So no rebound song of the day but as I’m stuck in the 90s here’s some britpop
