Here is a sexy little soup recipe that uses RAW and COOKED elements to give you the best of both worlds. The idea is that you cook some of the ingredients for your base then leave it to cool before blending in a whole shite-load of raw ingredients and/or superfoods for maximum super nutrition.
Raw/Cooked Soup to make ya wanna Shoop
1/2 butternut squash, peeled chopped
1 sweet potato, peeled chopped
1 onion, chopped
1 garlic clove, peeled
4 big cabbage leaves, chopped
Fry lightly in coconut butter for a few minutes to soften. Add whatever spices/herbs you like. I added in a mix of turmeric, cumin seeds, coriander & cumin powder, veggie stock and a dash of curry powder. Add some just boiled water and leave to simmer gently for about 10 mins. Set aside to cool.
In to the vitamix I added:
1 big handful of coriander
1 big handful parsley
2 tsp powdered sea veggies
1/2 fennel bulb
1 garlic clove (yes, another)
4 asparagus spears
Once the soup has cooled but is still warm then add to the vitamix and blend until thick and soupy.
I broke my camera so couldn’t take a photo. Bums! But it was delicious and my husband thought so too so that cannae be bad right?
