It’s Friday so I made a cake. Everyone should have raw cake for lunch on Friday. It’s the law somewhere I think? And if it isn’t then it damn well should be baby! This goes back to my post yesterday about loving your food. I soooo love my food and I love that it loves me back. If I wasn’t married to an actual man I’d be the first person on Earth to marry raw cake I’m sure of it. Have your cake and eat it truly is the saying for the raw food diet. So so so many people still think I sit and eat carrots and apples all day. If that were true I’d have killed myself from boredom and then come back to life just to kill myself again cos it would be THAT boring. Sheesh, if it were all carrots and apples so many people wouldn’t be doing it now would they? Hardly Krypton Factor 🙂
So here is my cake-for-lunch-cos-it’s-Friday cake. Actually it’s a cacao&brazil nut pudding cake. That’s a pish name. Fri-cake. Yep, Fri-cake.
I made the shortcrust base by mixing 1 cup ground sprouted buckwheat with 1/2 cup melted coconut butter, 1/2 teaspoon vanilla powder, pinch salt and 2 tbsp of coconut chips in the processor. Put in a tupperware and left to set in the fridge for a few hours. The topping was going to be chocolate but in the end I couldn’t be arsed making it so I just used a pudding of 1 avo blended with 3/4 cup brazil nut milk, 1 tbsp cacao powder, 1/2 tsp suma, 1 tsp yacon syrup (you could use honey/agave but I’m low GI). Er, think that was it. Spread topping on top of base when ready to eat and top with berries or whatever.
Yum factor infinity.
Don’t worry though, I balanced out the galaxy of craziness by having 2 pints of wild green juice for breakfast. I’ve got myself in to a wild food pickle at the moment. I’m finding if I don’t have my wild greens for breakfast the rest of the day I’m a bit wobbly and uncentred. I really rely on my greens to balance out my cacao highs.
Speaking of which, I made some wicked choc last night – wow best one so far I reckon. I made them for Claire Maguire AKA The Raw Bombshell and they’re a bit, er, random. In fact, if I was to release a raw chocolate bar or range it would need to be called Random because every time I make chocolate something different is created usually from a mish mash of bit o’ this, bit o’ that. In fact no, not Random, George’s Marvellous Medicinal Chocolate – YES! That’s what I’d call it. Anyways it was 50g melted cacao butter, 2 tbsp melted cacao liquor, 40g melted coconut butter – not for any particular reason, just cos I couldn’t be bothered getting more out the jar, mixed with 50g cacao powder, 25g carob powder, 1 tbsp spirulina, 1/2 tsp reishi, 2 tbsp coconut chips, 1 tbsp honey, 1 tsp he shou wu (aha), 1 tsp purple corn, pinch salt and that’s it. Super orgasmo take your brain to another dimension CHOCOLATE! These should so be on sale at T in the Park to get everyone off their face and dancing and happy and blissed out baby!
Hmm, not much else to report. My 2nd e-book is actually nearly finished. It’s just literally poured out my brain on to the computer the last week or so and I am looking forward to getting it out there.
It’s my last raw food class at Strathclyde University in Glasgow on Monday. Well, last until October where I’ll be doing a 6 week course covering more in-depth things. Woop can’t wait. I’ve really enjoyed this plus on Monday I get to see feedback from all the students which will be interesting.
