I’ve gone recipe MENTAL this week as I have yet another recipe for you today. Yes, 2 recipes in one week does officially constitute recipe mentalness…
I made this the other evening for the troop of volunteers working here at the retreat and it was officially ten orgasms out of twelve (see, I had to throw a sex reference in somewhere didn’t I? Perhaps I need help…do you think? If so drop me a comment below saying ‘Emma, you need some serious help’).
There’s a spiraliser here so I’ve been busy seeing how many things I can spiralise. It’s fun. Yes I know that probably makes me pretty sad but hey, I’m down with being a spiralising dork.

Here’s the recipe, I’m calling it Beet It (original amn’t I?)
1/2 – 1 cup raisins/sultanas
2 TBSP Olive Oil
1 TBSP honey
Pinch salt and pepper (not the band)
Spiralise the beetroot and the apple. Alternatively you can just grate them or use your food processor to chop finely. Add to a bowl with the raisins. In a separate cup squeeze the juice of the grapefruit, add the oil, salt, pepper, honey and mix until well combined. Check to taste. If it’s too citrusy play with the oil and honey to get a deep rich dressing taste. Pour over the beetroot and apple and leave to marinade for half an hour. Nice one!
Eating this recipe will make you an extra 68.249% more attractive to members of the opposite sex, 27.11% more attractive to members of the same sex and 1.098% more attractive to donkeys…so watch out!
